Cooking with lemons



Let's  cook with lemons.
The first thing we will make is lemonade.  We will need to have quite a few lemons, sugar, water and a lot of muscle power to squeeze the juice out of the lemons.


 
Now that the lemonade is made, let's make some sweet lemony treats.
                                        
                                                          Easy Lemon Cookies:
                                            "the basic cake mix cookie with a twist"
Using, 1 package lemon cake mix, 2 eggs, 1/3 cup vegetable oil, 1 teaspoon lemon extract, and 1/3 cup confectioners' sugar
 
Preheat oven to 375, pour cake mix into a large bowl.  stir eggs, oil and lemon extract until blended.  Drop teaspoonfuls of dough into a bowl of confectioners' sugar.  Roll them around until they're covered.  Put them on an ungreased cookie sheet.  Bake for 6-9 minutes. 


 Our next sweet treat:
 
                                                                 Lemon Square Bars
                                                  
2 cups flour                                                         2 cups sugar
1 cup confectioners' sugar                                  1 teaspoon baking powder
1 cup butter, melted                                            1/4 cup flour
                                                                           5/6 cup lemon juice
 

preheat oven to 350, grease a 9x13 inch pan
 
In a bowl stir together 2 cups flour and confectioner's sugar.  Blend in melted butter.  Press into the
bottom of the pan.  The Robins used an individual cupcake pan.  Bake for 15 minutes.  In a bowl, beat eggs, combining sugar, baking powder and 1/4 cup of flour (there should be no flour lump).  Stir in the lemon juice, pour this into your preferred baking pan or cupcake pan.  Bake for 30 minutes.
